Ingredients:

  • 1 pound ground beef, lean
  • 1/2 yellow onion, diced
  • 2 teaspoons garlic, minced
  • 1/4 cup green pepper, diced
  • 48 ounces beef broth, low sodium
  • 29 ounces tomato sauce
  • 1 teaspoon brown sugar
  • 12 ounces refried beans
  • 16 ounces light red kidney beans, in mild chili sauce
  • 16 ounces pinto beans, in mild chili sauce
  • 16 ounces white northern beans, in mild chili sauce
  • 14 & 1/2 ounces diced tomatoes, chili flavored
  • 1 tablespoon beef bouillon paste

Seasonings:

  • 1 pack chili seasoning
  • garlic salt
  • salt
  • pepper

Instructions:

  1. Brown the ground beef until it's about halfway cooked, then add the onion and green pepper. Continue cooking until the beef is cooked thoroughly and the vegetables are tender. Remove from heat, strain the grease and set aside.
  2. Add the beef broth, tomato sauce, diced tomatoes, garlic and chili beans to the crock pot.
  3. Spoon in the refried beans, mashing to a smooth consistency.
  4. Add the pack of chili seasoning and brown sugar. Add salt, pepper and garlic salt to taste.
  5. Add the meat and vegetable mixture to the crock pot.
  6. Cook on low for 6-8 hours, stirring occasionally.

Notes from Jolene:

Top with cheese (dad likes to put some in the bottom of the bowl before the chili goes in), crackers and/or corn chips. Best served with a corner-cut peanut butter sandwich and a brownie for dessert.
